A DIABETIC-FRIENDLY 3-COURSE MEAL

APPETIZER/SNACKS: GREEN PEA PANCAKES
 

This dish is an ideal start to the meal as it is high on fibre and protein. This healthy looking and sounding dish is tasty and easy to consume. 



Preparation time: 10 mins
Cooking time: 20 mins

 

Ingredients:

 

  • 1 cup yellow moong dal
  • 1 cup green peas
  • 1 1/2 Tsp chopped chillies
  • 1 tsp grated ginger
  • 1 tbsp chopped coriander
  • ½ cup chopped onions
  • Salt to taste
  •  

Method:

 

  1. Mix the soaked and drained moong dal, green peas, chillies, coriander and ginger and blend it in a mixer to make a thick batter.
  2. Add onions and salt to the batter and heat up a non-stick pan on the side greasing it with ¼ tsp oil.
  3. Pour a spoonful of batter on the pan and spread it in a circular motion making 5” thick round.
  4. Cook it till it turns brown on the sides. Repeat the process for the remaining batter and serve.

MAIN COURSE: LOW FAT BUTTER CHICKEN

 

This one is for all the butter chicken lovers who sadly can’t eat it in its true form. This recipe is not as rich as the original one but is easy to make and gives you a flavoursome experience. 



Preparation time: 10 mins
Cooking time: 45 mins

 

Ingredients:

 

  • 400 grams sliced chicken
  • 4 onions
  • 2-3 cinnamon sticks
  • 4 cloves
  • 2 Tej Patta
  • 1 Tbsp garlic paste
  • 2 cardamoms
  • 5-6 tomatoes
  • Salt
  • ½ Tbsp red chilli
  • ½ Tbsp coriander powder
  • ½ Tbsp Haldi
  • 3-4 chillies
  • Fresh coriander for garnish
  • ¼ cup yoghurt
  • 2 Tbsp oil
  •  

Method:

 

  1. Take 2 Tbsp of oil in a pan. Put in the onions(sliced), cinnamon, tej patta and garlic paste and saute the mixture well till the onion gets brown.
  2. Cover the pan and let the onions cool down. Once the mixture is cooled down, mix the tomatoes and yoghurt with it to make a thick, smooth paste.
  3. Do not wash the pan in which the onion mixture was sauteed. Use the leftover oil in that pan to saute the chicken in it.
  4. After the chicken is sauteed, put in the onion, tomato/yoghurt paste we made and let it cook.
  5. Add salt to taste, red chilli, coriander powder, green chilli and haldi.
  6. Let the chicken cook until the oil comes at the top and tomatoes become nice and red.
  7. Garnish it with fresh coriander and serve.

SUGAR-FREE DESERT: SUGAR-FREE GRANOLA

 

Oats has been established as a healthy snack now. This recipe is that of healthy oats with a flavour kick with natural sweeteners like fruits and honey. 



Preparation time: 10 mins
Cooking time: 1 hour

 

Ingredients:

 

  • 2 cups rolled oats
  • 1 ½ tbsp sunflower oil
  • 1 tbsp pumpkin seeds
  • 1 tbsp sesame seeds
  • 14 grams flax seeds
  • ¼ cup orange juice
  • 2 tbsp olive oil
  • Half a handful of strawberries
  • 2 tbsp hung yoghurt
  • 10 skinned almonds cut in small pieces
  •  

Method:

  1. Preheat the oven to 325 degrees Fahrenheit.
  2. Mix the orange juice with oats. Then mix the other ingredients (except yoghurt, almonds and fresh fruit) as well and spread them evenly on the baking tray.
  3. Bake for 45 minutes and keep turning the mixture in between.
  4. Remove from the oven and leave it to cool off.
  5. Add the hung yoghurt, almonds and fresh fruits. You can add a tsp of honey too if you feel like.
  6. Serve immediately to avoid making it too dry.
