DIY CAESAR SALAD DRESSING

Ingredients:

 

  • 2 small garlic cloves, minced
  • 1 teaspoon anchovy paste
  • 2 tablespoons freshly squeezed lemon juice, from one lemon
  • 1 teaspoon mustard
  • 1 cup mayonnaise’
  • 1/2 cup freshly grated Parmigiano-Reggiano (a cheese slice would also do)
  • ¼ tsp salt
  • ¼ tsp black pepper
  •  
Method:
 
  1. Take an empty bowl and whisk anchovy paste, garlic, lemon juice and mustard together
  2. Add mayonnaise, cheese, salt and pepper and whisk until well combined
  3. Taste and adjust the seasoning as per your requirement
  4. The dressing will stay fresh in the fridge for about a week
  5.
