EGG WHITE BREAKFAST BURRITO RECIPE FOR DIABETICS

Ingredients:
- 1 Tbsp. olive oil
- 1 Tbsp. finely chopped red bell pepper
- 1 Tbsp. finely chopped yellow bell pepper
- 1 Tbsp finely chopped green bell pepper
- 1 Tbsp. finely chopped red onion
- 3 large egg whites
- 1 8-inch whole wheat flour tortilla warm
- 1 slice low-sodium turkey bacon cooked, chopped
- Ground black pepper optional
- 2 Tbsp. fresh tomato salsa
Method:
- Heat some olive oil in a non-stick pan over medium heat
- Add the bell peppers and let them cook for 3-4 minutes, stirring every few minutes
- Add the eggs and cook till the eggs are set, frequently stirring
- Put the egg mixture, your choice of meat (If you wish to add any) and pepper
- Roll the tortilla
- Serve with salsa sauce
