EGG WHITE BREAKFAST BURRITO RECIPE FOR DIABETICS

Cooking time: 7 mins

 

Ingredients:
 
  • 1 Tbsp. olive oil
  • 1 Tbsp. finely chopped red bell pepper
  • 1 Tbsp. finely chopped yellow bell pepper
  • 1 Tbsp finely chopped green bell pepper
  • 1 Tbsp. finely chopped red onion
  • 3 large egg whites
  • 1 8-inch whole wheat flour tortilla warm
  • 1 slice low-sodium turkey bacon cooked, chopped
  • Ground black pepper optional
  • 2 Tbsp. fresh tomato salsa
  •  
Method:
 
  1. Heat some olive oil in a non-stick pan over medium heat
  2. Add the bell peppers and let them cook for 3-4 minutes, stirring every few minutes
  3. Add the eggs and cook till the eggs are set, frequently stirring
  4. Put the egg mixture, your choice of meat (If you wish to add any) and pepper
  5. Roll the tortilla
  6. Serve with salsa sauce
